- Garnish generously with shredded coconut and a few more raisins on top; serve with a side of chilled mandarin oranges straight from the can
NOTES:
- If you think the curry is too thick, you can thin it with either some chicken broth or milk.
- Since everything in this meal has already been cooked before, you're really only combining and warming up, so it's really quick.
Serves two adults.
