My wife just saw the picture you posted. She said we are making that!
Elephant ears are good!!!

That citric acid can do some great tenderizing!

I'm gonna have to try that pork recipe madmike.
I just bought three pork tenderloins at the commissary this morning.($2.25 a pound!) and I have a bottle of that mesquite marinade I've been waiting for something to use it on. I think that may be friday night's dinner!

I love pork and pineapple. Tacos al pastore is my favorite. If you use fresh pineapple in any marinade, you have to be really careful how long you let it marinate. Fresh pineapple has a realy strong enzyme that will turn just about any meat into mush overnight. Canning really wipes the enzyme out.

My wife Diana just made Green Tomato Salsa. The best I have ever had. Damn!!!! We had a big crop that never matured, she whipped this up and canned a shitload. Goooood stuff.

What is it with Hawaiians and Spam???

I've got two Hawaaian friends that would both rather eat Spam than just about anything. My wife and I have actually sent several care packages of Spam and that pre cooked rice to our friend in Afghanistan. I found those single serve packages of Spam in the foil package and that's all he wants. You'd think he wouldn't want anything that even closely resembled an MRE

We had the same thing here this year, none of our tomatoes ripened, and the ones that did come close were really thick skinned, almost white around the skin when they were cut... crappy growing year, most of the corn didn't come in either, and the green beans were a complete loss...

A dry season over here but the in-laws grew some KILLER sweet corn! My wife made an AWESOME crock pot pork butt today. The flavor was great with some of her great cole slaw. Had a root beer and all was good!!!! Yes kids, my wife RULES!!!!!

Man, I think I had some of the best corn I've ever had this summer. It was really dicey early in the season, but all in all mother nature finally took care of our farmer friends in this area.

What was totally bizarre was the crabs. I'm at the head of Chesapeake bay, so our water is usually fresh, therefore no crabs. We would normally have to run about 5-6 miles down the bay to really start seeing crabs. As late as a week ago, we were catching crabs on handlines 3 miles up the Susquehanna River. Nothing like a bushel of hot crabs loaded with Old Bay seasoning and kosher salt and a couple dozen ears of corn thrown on top of the pot.

Not sure if this is in here, But Dt113 asked me to post , looks yummy :)

Only in Louisiana

Here's a new twist on how to serve burgers and if you don't cook, give this handy little guide to someone that does and request them.

ATT00001.jpg

Handmade ground beef patties, topped with sharp cheddar cheese, wrapped in a bacon weave, then the next step, add hotdogs as the heads, legs with slits for toes and tail.

Next step. Place on an oven rack, covered loosely with foil and baked for 20-30 minutes at 400 degrees. A little crispy, not too crunchy...just how a turtle should be, no?

I'm doing brauts, the potatoes, and some barbeque'd peaches for dinner tomorrow

Grilled Peaches
Into a large Zip-Loc bag;
add a small jar of honey,
some clove or nutmeg or allspice or all of the above.

Squish around to mix & add peach halves. Canned will do, but fresh is more better. Remove with tongs and grill. Remove halves from grill and place in a bowl. Fill the dent where the pit was with strawberry jam. Add a scoop of Haagen-Das Vanilla ice cream on the side. Drizzle left over honey mixture over everything.
