Hey RichG...even easier...brats or polish sliced or whole+jar of kraut+bit of mustard and beer(amount before, after and during is up to you-sometimes I drink it all before it gets into the pot!LOL) all in a crock pot.(spuds optional) Or instead of sausages, try pork chops......Ummmm!

for the grill....
boneless skinless chicken thighs(2-3 per person) thawed. put in a big ziplok.
add:
couple tablespoons fresh ground ginger(powdered ok...use less)
juice of 1/2 lemon
1/2 cup shoyu (soy sauce) per 12 thighs..or so
1 clove minced garlic (garlic powder ok)
Let soak minimum 3 hrs in fridge and grill...

Don't take my word for it, ask Fungus and his lady!

my kids favorite.....
heat a big fry pan
lay in a large flour tortilla
(heat one side and set aside. do another tortilla. when 1 side is done,flip over and add)
dump a "big" handfull of shreaded cheese
couple table spoons of Ortega diced green chilies(form the can-drained)
couple tablespoons of cubed SPAM.
2 tablespoons of crushed/drained pineapple (optional)
or anything else you got laying around....

Add the 1st tortilla(cooked side against filling and heat for a min. then flip the whole thing over and heat another min. or 2.
Remove from pan slice like a pizza and serve...with sour cream!
Keeps my kids quiet for at least 15 mins!

Kids other favorite
2 boxes Kraft Mac-n-cheese. Prepare as directed
1 can Spam cut into kid sized chunks.(substitute hotdogs, ground beef or canned chili) mix into Mac and serve!

Speaking of crockpots....

Slow cook either your favorite beef or pork roast all day long until it shreds easily with a fork.

Cover ten or so tortillas with a wet paper towel on a plate, heat in microwave for a minute.

Take your tortilla, which is now soft, put some of the shredded meat on it (not a whole lot), add some cheese (monterrey jack is my fave). You can also add hot sauce (El Pato is my fave), or diced green chili's from a can.

Roll it up and place on a lightly oiled cookie sheet. Repeat until pan is full. Use a brush to lightly coat all of your taquitos with olive oil-it doesn't take much!

Bake in the oven at 350 degrees for about 20 minutes or until the cheese starts to run from the end and the tortillas start to get crisp.

Eat with guacamole, sour cream, whatever. Good stuff.

avocado salsa:

one avocado
1-3 chipotle peppers from a can of chipotle peppers in adobo sauce
(depends on how spicy you like it)
1-2 tablespoons of adobo sauce from said can
1 teaspoon of minced garlic
3 ripe tomatoes
1 can diced fire roasted tomatoes
lemon juice to taste
cumin to taste
liquid smoke to taste (if you prefer that smokey flavor)

remove the pit from the avocodo and squeeze out the goodness into a food processor with garlic. process till somewhat creamy, but still some chunks. dice the three tomatoes, ad avocado mixture to the tomatoes, stir well, mince the 1-3 chipolte peppers (i prefer three,but i like it spicy) ad to mixture, spoon out the adobo sauce from can ad to salsa mixture, stir, sprits lime juice, cumin and liquid smoke to taste. chill for minimum of one hour (overnight is the best) and enjoy.

edit: special note, the salsa gets hotter after sitting over night. be forewarned if you use 3 peppers like i do

Grill or pan fry up some Kilbasa or polish then slice into 3/4" rounds....pile'em in a pyrex baking dish. Add 1 Fresh "RIPE" pineapple, skinned, cored and cut into 3/4" to 1" chunks(Large can of pineapple chunks 'drained' will work) then apply a very generous amount of your favorite BBQ sauce.....stir it all so that it's all coated in BBQ sauce...reheat on the grill or oven... Serve by itself and a box of toothpicks as an appertizer...or spoon it over a scoop or 2 of white rice...or spoon it in a hoogie roll. Everyone loves it, kids, dogs, old folks, even the grumpy neighbor!

hey al low ha, bra dats right! spam is da best!!! we call it hawaiian steak!!! lol bra i juss made some spam hamburgers....i call it bumbucha burgers, cut spam in big squares fry in pan,put a slice of cheese,toast portuguese sweet bread hamburger bun put choke mayo,fry an egg,put spam,egg,and some hash browns on the bun .get a pepsi or cold corona eat ,drink.....den go sleep for an hour!!!! lol aloha pat.

Ho Pat...I come over fo grind bumbucha burgers!
Spam goes with "every F-ing thing"!

Last night da neighbor came over with some Marlin he got that morning(now thats fresh brah!)....so I made this:
1" thick Marlin(or shark, ahi, mahi mahi ...) steak. Butter both sides and lay on a sheet of alum foil. add 1/8 tsp grated ginger(or sprinkle powdered ginger),1/2 to 1 clove garlic crushed..and fold foil into pouch..leave one end open....add shoyu(soy sauce) and we like add ponzu sauce...or just add lemon juice to shoyu and seal up the pouch. Bake'em in da oven @375' 10 min and flip and bake another 10...or put'em on da grill 5 mins and flip...it done when the foil pouch looks like it's gonna pop! Served up with rice and fresh green salad from our garden and that good ol 'Pordagee' sweet bread....& beer! Way better than any restaurant!

mine is
1lb hambuger meat browned
1 chopped finely chopped onion
dice up a few potatoes boil them make mash potatoes
spread them on top of the ground beef
sprinkle cheddar cheese all over the top
cover on low heat let sit for 10 mins or untill cheese is melted
season to taste

68volks heres a variation my kids like;
1 lb hamberg browned w/minced onion-salt-pepper to taste and 1 can brown gravy and heat.
cook up some spuds or instant mashed or rice
plate the spuds/rice and spoon the hamberg/gravy on top!
you can use toast or noodles too! and beer...for me, not the kids!

works w/Spam too! LOL!

Posole... trust me, it's good

You need:
some pork, I usually use about 1 1/2 to 2 pounds (preferably loin, lean is best)
hominy (big ole #10 can)
New Mexico red chile (powdered), two 4-6 oz. bags.
Big pot (damn big, not monsterous, just plenty big. Mine will hold probably 3 gallons of water-just to give you an idea)

Place pork in pot, cover with water just an inch over the meat. Add half of one bag red chile, bring to boil, then turn down to simmer. Let 'er simmer for about one and a half to two hours, making sure to add water whenever needed, 'til the meat is done.

Strain meat in colander or fine mesh sieve. Pick excess fat out (best reason to use lean pork), then return meat to pot. Open the #10 can of hominy (I use my electric can opener, just keep turning the can while the opener floats along the edge... I'm kinda weird). Add the entire can of hominy. Add more water, enough so that the meat and corn are completely covered with about 2-3" of water over them. Pour the rest of the chile in the pot.

Bring to boil then reduce to simmer, leave on the stove for about an hour or so 'til good and hot.

Serve it up with some sopapillas, flour tortillas, or if you're white, try some french rolls or sourdough buns. I make my own flour tortillas too, none of that store bought crap with my soup!

Try it, you will like it!

Mmmmmmm, comfort food! What kind of variations have you done with this? I can see so many directions you could go with this. Gotta try it!!!! What is sopapilla? I'll eat just about anything!

We eat that All the time. I like to use Magi Hunter Gravy insteadof regular brown gravy and we switch up between spuds, egg noodles and macaroni.

Here's a really easy crock pot cheat version of kalua pig we eat alot. I actually made it Wednesday and have had it for dinner the last three nights.

Take a pork roast, what ever cut you prefer. I usually use a pork butt. Put about an inch or so of water in a crock pot. Coat the roast lightly with Hawaiian salt. Kosher salt works ok if you don't have Hawaiian Salt. Add a generous tablespoon of liquid smoke and then cook on low 6 hrs or so. We all know how crock pot meals go. Set it and forget it.

Shred the meat when done and serve over a bed of fresh cooked rice. I use a little soy sauce. mmmm

A sopapilla (sue-pie-pee-yah) is similar to an elephant ear or indian fried bread, just usually thinner, lighter, and crispier (at least the way I do them!).

I don't add anything to my posole, it's the way I was raised on it, just a pot of that cooking makes the house smell really, really good. I know some folks add carrots, celery, cabbage, and other stuff to theirs, I just can't do it though, that's more like menudo, which I do not like.
